Chicken Claw on Pepes

(RK-on Kitchen) Pieces of chicken claw mixed with Pepes spices and a sprinkling of basil leaves then wrapped in banana leaves has an unique yummie smell.




Ingredients:

  1. ½ kg chicken claw, clean, boiled until soft, remove and drain
  2. Water 300 ml
  3. Banana leaves for wrapping

Spices:
  1. 1 finger of Ginger, crushed
  2. 1 finger of Galangal, crushed
  3. 10 sheets of Bay leaves
  4. 3 pcs red chilli, split, cut into 2 parts
  5. 3 pcs green chilli, split, cut into 2 parts
  6. 1 stalk lemongrass (white take part), thinly sliced
  7. Salt
  8. Sugar

Smoothed Ingredients:


  1. 5 cloves garlic
  2. ½ tsp coriander (ketumbar), toasted
  3. 7 items of Pecan (kemiri) 
  4. 2 segment Grilled turmeric

Directions:
  1. Marinate claw stew with ground spices until blended. Add spices (except the bay leaf).Let stand for about 15 minutes.
  2. Take a banana leaf, place bay leaves on top. Insert 2 pcs claw spiced, wrapped round sweep.
  3. Steam for approximately 30 minutes, remove from heat.
  4. Grill pepes over the charcoals until the leaves dry. Ready to serve.
